Two AA rosettes and a stunning backdrop to the drum tower of Edinburgh Castle make the Heights a fine dining experience to savour. Perched atop the Apex International hotel, the clean lines of the restaurant, finished in marble, wood and glass, don’t attempt to compete with the setting. The cuisine is unabashedly local, with hearty dishes such as fillet of Inverurie beef with red onion and shallot confit.
